Fancy Schmancy Simple Salad

This one reminds me of one served at a fancy hotel I have eaten at on the Plaza in Kansas City. It comes in at 188 calories and accompanied the taco soup like it was meant to be. Love is in the air..and in my belly!


2 cups Artisan lettuce 
6 sliced beets
1 hard boiled egg, sliced
1 T McCormick Salad Topping
1 T Olive Garden brand (or your fav) dressing

I am not sure why these five ingredients love eachother and me so much, but they make my tastebuds tingle with appreciation!

Soup de Taco

Snowed in, I panicked to think what I could feed my family. Rustling through cabinets in a frenzy and BAM!! It hit me! I have burger in the freezer, a can of corn, broth concentrate, etc.  With a sigh of relief I concocted this soup and was so pleasantly surprised to learn when entering in my app, that this is actually a low cal soup (as in 150 calories!!! until loaded with sour cream, cheese and chips). With a thankful heart (that we wouldn't starve to death) and a full tummy, I jotted it down for you. And yes, I am overly dramatic. :)


1 lb lean hamburger
1 onion
Beef or chicken broth (I use better than bouillon to make it)
1 can chopped green chiles
1 can chopped tomatoes
1 can pinto beans
1 can Mexicorn
1/2 envelope Ranch seasoning 
1 envelope taco seasoning 
1 t garlic powder
1 t onion powder 
1/2 t smoked paprika 
1/2 t jalapeño powder

Cook the hamburger and onion and drain. Add 4 cups broth, cans and seasoning. Allow to warm and get yummily married in the crock pot for a couple hours or for 30 min or so on simmer.

Ham and Eggs Florentine

With the start of the new year, I am again working on eating more healthy. I made this delish breakfast dish this morning and it was very filling and really good, and only 300 calories for the whole shebang! 
1 T ICBINB light
1/3 c chopped red onion
1 T green or jalapeño pepper
1/4 cup brown sugar deli ham
2 eggs
1 T milk
1/3 c cheese 

Melt 1/2 the butter in a skillet then add peppers and onion until cooked. Add ham and leave in skillet on low heat. Whisk together the eggs and milk and melt other butter then add eggs like to make an omelette, but scramble slightly. I flipped it in a few pieces. When cooked, salt and pepper to taste then add meat mixture. Sprinkle with cheese and enjoy!
