New Beginnings and a Low Calorie Frittata

Hello friends! I have decided to stop harassing my Facebook friends with my incessant food postings and take it to a different  medium.  Thanks for joining me in my new adventure. 

Well, today starts a new era for me.  Since my layoff from the State of Missouri I have enjoyed the benefit of Unemployment Benefits while attending college.  Today, I ran out.  So to celebrate my impending financial doom, I am having a healthy low calorie frittata while I peruse the few open job opportunities here in my little town.

Easy Low Calorie Frittata

3 eggs
1/4 cup milk
salt and pepper
4 slices brown sugar extra lean deli ham
1/3 cup mozzarella
1 green pepper, chopped
1/2 a medium sweet onion, chopped

Preheat oven to 400.  Spray a pie plate with cooking spray.  Beat eggs together with the milk in a bowl and add salt and pepper.  Pour into pie plate then add the remaining ingredients then stir gently with a fork.  Bake for around 15 minutes, until middle is firm.  Allow the frittata to cool for 5 minutes and enjoy a 1/4 of a pie plate slice for ......get this.....only 102 calories (according to myfitnesspal)!
